"s o u p" y -- "s o u p" y...

it's down to the last few food preparation practicals...
gonna miss the times and fun we had in the ND kitchen.. =)
well, despite having our Nutrients and Metabolism class test the next day..
we still had fun..
it's a practical on soup and thickeners..
each group had to prepare a stock (veggie/chicken/beef).. and also a soup from the stock..
my group got to do beef stock + beef consomme..
let's just say it's very interesting..

i've never ever touched raw beef before all my life..
it's probably because my family doesn't take beef..
not that it's some kind of religion restriction of course..
it's just not our dietary habit to take beef..
so my 1ST TIME of handling beef was yesterday..
no offence to you beef lovers.. but raw beef stinks!! my opinion anyway..
ewwwwww...
and the scum and foam removed during the preparation of the stock..
i dun even wanna remember it..

it was 1 hour of simmering..
for us.. 1 hour of flipping though notes.. *to pass time.. class test the next day lar weyy*
checking every few minutes and removing the scum..
have people reserving the leftover beef.. will go into detail later.. =P
and of course the usual joking and playing around..



and it was time to prepare the beef consomme..
for your information.. it is a clear beef soup..
it's so clear that it is actually supposed to resemble the colour of green tea when it's done..
chopped and minced beef + thyme + celery + onions + spring onions + tomato puree..
and the mixture was simmered in the cooled stock from before.. which, by the way was not enough ( =______= )lll
and it was another 1 hour++ of waiting..
and the leftover beef from the stock preparation..
here's what happened to it..





stir-fried beef with tomatoes, onions.. and i dunno what else..
and it tasted really nice!!
compliments to the chefs -- Eugene and Georgen.. u guys rock!
and here's the beef consomme.. still in the process...



the secret ingredient -- egg white.. that binds all the scum and impurities..
see the brownish stuff floating on the soup.. it's egg white protein and some minced beef and stuff..
it took forever for all the minced ingredients to finally float to the surface of the soup..

the final product.. crystal clear beef consomme.. unbelievable right?
